Ingredients

Potato medium size (starchy variety) : 6-7
Sugar or rock sugar (misri) powder or jaggery (gud) : ½  cup
Pure (Desi) Ghee (clarified butter) : 3 tbsp
Green Cardamom powder : ½ tsp
Chopped nuts - Almonds, Cashews (optional) : 2 tbsp 
Raisins (optional) : 8-10
Desiccated Coconut (optional): 2 tsp
milk (optional, for creaminess) : 2-3 tbsp

Instructions


Boil and Mash – Boil the potatoes, peel and mash them well to remove lumps.

Sauté in Ghee – Heat ghee in a pan/ kadahi, add the mashed potatoes and cook on a low flame until they turn golden and aromatic. It will take 7-10 minutes on low flame.

Sweeten the Halwa – Add sugar/powdered misri/grated jaggery, you can take any of them according to your choice and its quantity may be altered as per your taste. Mix well and cook on low flame until fully dissolved. If using jaggery, add a little milk to prevent sticking.

Flavor with Cardamom – Sprinkle cardamom powder and mix to enhance the aroma.

Garnish & Serve – Add chopped nuts and raisins, mix well. Garnish it with desiccated coconut powder and serve warm.

Notes

  • Use Starchy Potatoes – Opt for potatoes that mash easily for a smooth texture.
  • Boil & Mash Properly – Ensure potatoes are boiled well and mashed lump-free to avoid a grainy texture.
  • Cook in Ghee – Sauté the mashed potatoes in ghee until they turn slightly golden for a rich, authentic flavor. Since this is a vrat recipe, ghee is essential, making the dish both fulfilling and nourishing.
  • Balance the Sweetness – Adjust sugar/jaggery as per taste; add gradually while stirring.
  • Enhance with Cardamom – Cardamom powder adds an aromatic touch; don't skip it.
  • Add Nuts for Crunch – Dry fruits are optional. Adding them enhance the taste of halwa. Although optional ,garnish it with chopped almonds, cashews and raisins for extra texture.
  • Cook on Low Flame – Slow cooking ensures proper flavor absorption and prevents sticking.
  • Serve Warm – Aloo ka Halwa tastes best when served warm.

Cooking time: 10-12 minutes
