Growing up, I often watched my mother prepare the most comforting meals using the simplest of ingredients. One such dish was her Cabbage Rolls—flavorful little parcels wrapped in cabbage leaves, cooked with love and patience. Her original recipe has stayed with me, but today, I add a slight twist of my own with a rustic Potato-Tomato Masala that brings warmth and richness to the plate.
Cabbage Roll Masala isn’t your typical cabbage sabzi—it’s elegant, wholesome, and just different enough to surprise your taste buds. Whether served as a main course or side dish, it’s a recipe that transforms everyday ingredients into something truly special.
Cabbage Rolls Masala Recipe

Cabbage – 400 gm (preferably large leaves, separated carefully)
π₯ For Potato-Tomato Masala
- Garlic – 4–5 cloves, finely chopped
- Onion – 1 small, finely chopped
- Tomato – 1 small, chopped
- Potato – 2 medium, cut into thin slices
- Fenugreek seeds – 6–8
- Turmeric powder – ½ tsp
- Red chilli powder – ½ to 1 tsp
- Coriander powder – 1 tsp
- Asafoetida – a pinch
- Salt – to taste
- Oil – 1½ tsp

For Roll Stuffing
- Ginger-garlic-onion paste – 2 tbsp
- Turmeric powder – ½ tsp
- Red chilli powder – ½ to 1 tsp
- Coriander powder – 1½ tsp
- Roasted cumin powder – 1 tsp
- Asafoetida – a pinch
- Salt – to taste
Oil (for cooking rolls) – 1 to 1½ tbsp
π©π³ Step-by-Step Instructions
π₯ Step 1: Prepare the Potato-Tomato Masala
- Heat oil in a pan.
- Add fenugreek seeds and let them crackle.
- Add chopped garlic, sautΓ© until golden.
- Add onions and cook till translucent.
- Add chopped tomato, turmeric, chilli powder, coriander powder, asafoetida, and salt.
- Mix well and add the thinly sliced potatoes.
- Sprinkle a few drops of water, cover the pan, and cook for 5–7 minutes until potatoes are soft. Set aside.
π₯¬ Step 2: Prepare the Cabbage Rolls
- Carefully separate cabbage leaves.
- Mix all the stuffing ingredients to make a thick paste.
- Place one leaf flat, spread a spoonful of stuffing evenly across the leaf.
- Gently fold it into a roll or parcel.
- Repeat for the remaining leaves.
Tip: If you're skipping onion-garlic, make a spice paste using just dry spices and a few drops of water.
π₯ Step 3: Cook the Cabbage Rolls
- Heat oil in a pan.
- Gently place the raw cabbage rolls into the pan.
- Cover and cook on a low flame for 8–10 minutes until tender and lightly golden.
π Step 4: Assemble & Serve
- Place the cooked cabbage rolls over the Potato-Tomato Masala.
- Garnish with fresh coriander if desired.
- Serve hot with chapati, naan or paratha.

- You can take vegetables of your choice in the stuffing or serve the rolls plain.
- The Potato-Tomato Masala is optional but adds depth and color.
- Adjust spices and oil according to taste.
- For a lighter version, steam the cabbage rolls instead of shallow-frying.
- Avoid using garlic-onion if following a sattvic or fasting diet.
