This traditional Rajasthani delicacy transforms basic gram flour into soft, spongy dumplings simmered in a tangy yogurt-based gravy. Besan ke Gatte is popularly known as Taka Besan in Uttar Pradesh, as the round, coin-shaped gatte resemble traditional taka (coins).

Sharing my timeless recipe that celebrates simplicity, purity and flavor in every bite.

📝 Ingredients

For Gatte (Gram Flour Dumplings)
🌾 Besan (Gram Flour) – 1 cup (approx. 125 g)
🥣 Yogurt (Curd) – 4 tbsp for dough 
🧡 Turmeric Powder – ¼ tsp
🌶️ Red Chilli Powder – ¼  tsp
🌼 Asafoetida (Hing) – a pinch
🌰 Carom Seeds (Ajwain) – ¼ tsp (crushed)
🌼 Baking Soda – ½ tsp
🧂 Salt – ¼   tsp salt or as per taste
💧 Water – as required (for kneading)

For Gravy
🥣 Yogurt (Curd) – 200 g for gravy
🍅 Tomatoes – 4 medium
🧄 Ginger – 1-inch cube
🌶️ Green Chillies – 1–2
🌾 Kasoori Methi (Dried Fenugreek Leaves) – 1 tsp
🪵 Cumin Seeds – ½ tsp
🟡 Turmeric Powder – ½ tsp
🌶️ Red Chilli Powder – ½ tsp
🍃 Coriander Powder – 1 tsp
🌼 Asafoetida (Hing) – a pinch
🧈 Garam Masala – ½ tsp
🧂 Salt – to taste
🌿 Fresh Coriander Leaves – 2 tbsp, finely chopped

Cooking Medium
🪔 Refined Oil – 3 tbsp (plus 2 tsp for greasing and kneading)

👩‍🍳 Step-by-Step Instructions

Step 1: Prepare the Masala Paste
  • Grind together tomatoes, ginger and green chillies to form a smooth paste. Set aside.
Step 2: Make the Gatta Dough
  • Take gram flour in a bowl. Crush the carom seed to enhance the flavor and mix crushed carom seeds into the besan. 
  • Add baking soda,  turmeric powder, red chilli powder, a pinch of asafoetida and salt. Add 1-2 tsp refined oil. Mix well.
  • Add 4 Tsp (or as required) yogurt gradually and Knead a soft dough using 1-2 tbsp water if needed. Dough must be soft. Cover it. Keep it aside for 10-15 minutes to set.

Step 3: Shape and Boil the Gatte
  • After 10-15 minutes grease your hands with some oil and apply to the dough again. Apply some more oil to your hands so that the dough does not stick to your hands.  Divide the dough in small portions, same as required for making pooris, Roll out these dough portions into long cylinder logs with a diameter of around ½ inch and 4 inch in length.

  • Boil water in a pan, then drop these logs gently one by one. Let them boil for 12–15 minutes on high flame to get the gatte logs cooked thoroughly.

  • Remove from flame after 12-15 minutes and drain out gatte from the water. The leftover water is used to make the gravy. After gate get cooled, Slice it into ½ inch round pieces The gattes are soft and spongy.

Step 4: Prepare the Gravy
  • Heat 2–3 tbsp oil in a pan. Add cumin seeds and a pinch of asafoetida.
  • Add turmeric, coriander, red chilli powder and kasoori methi. Sauté for a few seconds, then add the tomato-ginger-chilli paste.
  • Cook until the oil separates. Now, slowly add 4 tbsp whisked yogurt, stirring continuously to prevent curdling. Stir it until there is a boil in it. 
  • Add leftover water  into it. Adjust the consistency as per your taste. Try to make it little thin as Gatte  also absorbs the gravy and the curry gets thick. Keep stirring it for 5-6 minutes on low flame or till consistency is attained. 
Step 5: Add the Gatte
  • Add the sliced gatte pieces, salt, garam masala and chopped green coriander. 
  • Mix gently, cover and cook for 4–5 minutes on low flame so the gatte (dumplings) absorb all the flavors.
  • Besan ke Gatte  is ready to serve. Garnish with fresh coriander leaves.

  • If your gravy thickens too much, add a little warm water before serving.
  • Gatte tend to absorb gravy, so keep the curry slightly thin.
  • You can also shallow-fry the gatte for a slightly crisp texture before adding to gravy.
  • For a richer taste, add a spoon of fresh cream at the end.
  • Always whisk curd well before adding it to prevent splitting.
  • No Onion–No Garlic Recipe: This traditional version is made without onion or garlic — perfect for a Satvik meal.
    👉 If you prefer the regular version, in Step 4 (preparing the gravy) add a paste of 2 medium onions and 10–12 garlic cloves and sauté until golden before continuing with the recipe. Rest remains the same.

💧 1. Prevent Sticking:
While boiling the cylindrical gatte logs, add a teaspoon of oil to the boiling water. This prevents them from sticking together and helps them cook evenly with a smooth, non-sticky surface.

🌶️ 2. Add a Flavor Kick:
Mix a pinch of red chilli flakes into the dough for an extra burst of flavor. It gives the gatte a gentle spicy touch that enhances the overall taste of this no-onion, no-garlic recipe.

✨ 3.Soft & Spongy Texture: 
Knead the dough gently but firmly; it should be soft, pliable and not dry, just like poori dough. It should not be sticky. Too much flour makes gatte hard. The right consistency helps the gatte hold their shape and stay soft from inside after boiling.

🔥 4. Boiling Done Right:
Don’t overboil the gatte. Remove them as soon as they rise to the surface and become slightly firm.

🔪 5. Slice Carefully:
Always cool the boiled gatte logs before slicing; this helps maintain their round shape without crumbling.

🥣 6. Keep Gatte Soft:
Once the gatte are boiled, avoid overcooking them in the gravy. Add them just before serving and let them simmer for a few minutes only. This keeps them soft and prevents them from turning hard or chewy.

🌿 7. Tadka Tip:
Tempering (tadka) with cumin and hing enhances aroma and gives a signature Rajasthani touch.
