Sabudana Khichdi is a light, comforting and nourishing Indian dish made with soaked sago pearls, boiled potatoes and mild spices. Commonly prepared during fasting days like Navratri, Ekadashi and Shivratri, it is valued for being easy to digest while providing instant energy. The soft, translucent sabudana pearls blend beautifully with gently sautéed potatoes, green chillies and cumin, creating a delicate balance of flavor and texture. Today, I’m sharing my tried-and-tested recipe of Sabudane ki Khichdiperfectly fluffy, non-sticky and full of flavor.

📝 Ingredients

Sabudana (Sago): 500 g
🥔 Potatoes: 4 small (hand-crumbled boiled potatoes)
🌿 Cumin Seeds: 2 tsp
🫚 Ginger: 2-inch piece (cut into small squares)
🌶️ Green Chillies: 2 (finely chopped, adjust to taste)
🌶️ Whole Dried Red Chillies: 2
🌿 Fresh Coriander Leaves: 2 tbsp (finely chopped)
🌶️ Red Chilli Powder: 1 tsp
🍋 Lemon: 1
🧂 Sendha Namak (Rock Salt): to taste
🫒 Refined Oil: 2 tbsp
🧈 Ghee: 2 tsp (optional but recommended)

👩‍🍳 Step-by-Step Instructions

Step 1: Soak the Sabudana

Wash the sabudana thoroughly and soak it in water for at least 2 hours. The pearls should swell up and become soft.

Step 2: Prepare Potatoes

Boil the potatoes, peel them and either cut into small pieces or hand-crumbled - gently mash them using your palm.

Step 3: Drain Sabudana

Drain excess water completely using a strainer and keep aside.

Step 4: Prepare the Tempering

Heat oil in a heavy-bottomed pan or kadhai. Add cumin seeds and let them splutter. Break the whole dried red chillies and add them along with ginger, green chillies, and red chilli powder.

Step 5: Add Potatoes

Add the boiled potatoes and sauté for 2 minutes so they absorb the flavors.

Step 6: Add Sabudana

Add the soaked and drained sabudana to the pan. Mix gently.

Step 7: Cook the Khichdi

Stir continuously on medium flame for 6-8 minutes, until the sabudana turns translucent and fluffy. Add ghee at this stage for enhanced aroma and taste.

Step 8: Finish & Garnish

  • Switch off the flame. Squeeze fresh lemon juice over the khichdi for a burst of freshness.
  • Garnish with finely chopped coriander leaves.
