Sharad Poornima & Chawal Ki Kheer

🧺 Ingredients

✨ For the Kheer:

🍚 Basmati Rice – 75 gm

🥛 Full Cream Milk –- 1 litre

🥥 Desiccated Coconut Powder – 2 tbsp

🍬 Sugar – 120 gm (or as per taste)

🌸 Green Cardamom – 4

🌼 Saffron Strands – 4–6 (soaked in warm milk)

✨ For the Garnish:

🥜 Cashew Nuts – 8–10

🌰 Almonds – 8–10

💚 Pistachios – 10–12

🌿 Chironji (Charoli) – 16–18

🍇 Raisins – 16–20

👩‍🍳 Step-by-Step Instructions

🥄 Step 1: Prep the Ingredients

  • Rinse the rice thoroughly and soak it in water for about 30 minutes.
  • Meanwhile, soak the saffron strands in 1 tablespoon of warm milk.
  • Finely chop almonds, cashew and pistachios. Keep aside.

🥛 Step 2: Boil the Milk

  • Drain the soaked rice. 
  • In a heavy-bottomed pan, bring milk to a boil over medium flame.

⏳ Step 3: Cook the Rice

  • Add the rice to the boiling milk and reduce the heat to low. Stir continuously to prevent sticking.
  • Let the rice cook gently in the milk for 25–30 minutes stirring often until the milk thickens and rice turns soft.Check rice with the ladle. By this time the milk reduces to a creamy consistency.

  • When the rice is cooked and the mixture thickens add desiccated coconut powder, almonds, cashews, pistachios, chironji and raisins.
  • Pour in the saffron milk.
  • Mix well and simmer for a few minutes to let the flavors blend beautifully.

  • Turn off the flame.
  • Add sugar and mix until completely dissolved.
  • Sprinkle cardamom powder for beautiful aroma.
